When Jess’ dad says that, Nick’s eyes suddenly get this spark, like “her dad is approving me” and you can see how happy that makes him. Even though we all know Bob’s reaction after Nick tells him it’s Jess, the fact that Nick was so worried about getting his approval and for a second he thought he’d gotten it, just shows how much he wants this to work out, he’s so serious about this that he wants to have her parents’ blessing. He truly cares about what her family thinks of him.
